Elyon Cakes is a bakeshop in Bukit Merah that had only started operations a few months ago.
Despite its specialty in cupcakes, Elyon Cakes also does sell cookies, tarts and waffles so as to offer a variety of different bakes to their patrons.
(Diamond Custard Kaya)
On the day of the visit, they were selling several bakes, such as this Diamond Custard Kaya. This one replicates a local flavour of Danish; a glazed bun with kaya topped over a layer of custard in the middle. The glazed bun was sweetly sticky; the fork got stuck while we were trying to pull it apart, and the custard beneath the kaya added a bit of egginess to the coconut flavour. Kaya did feel a bit sweet and generic; pretty much similar to those in supermarkets that are sold in jars.
(Apple Crumble)
The Apple Crumble had a soft crust on the top, which was accompanied by a sweet layer of caramalised apples that hinted a strong scent of cinnamon. The cookie-like crumbs held on well, but it seemed to have been slightly salted to bring a sweet-savoury for the tart; personally I found that rather salty for my liking as it just adds on with each bite.
Overall, Elyon Cakes does add an interesting addition to the Bukit Merah neighbourhood. The bakes are also affordable and does not break the budget as well, which makes it competitive to the neighbouring traditional bakeries within the area.
